Lussebullar : Xmas Recipe

Tomorrow is Saint Lucia day in Sweden, which is an awesome excuse to eat some delicious "Lussebullar". This video explains the deal and might help you get in the spirit:

Now, for the best part:

(makes 35 buns)

– 50g fresh yeast
– 100g butter
– 5dl milk
– 250g Kvarg/quark, this is a Swedish milk/cheese product and there is not really an equvallent in the USA, but we have tried swapping it out with Ricotta cheese which works fine, you could also mix Ricotta with some sour cream.
– 1g of saffron
– 1.5dl sugar
– 0.5 tsp salt
– approx. 17dl flour wheat flour
– Sultanas
– 1 egg

Crumble the yeast in a bowl. Melt the butter, add the milk and heat (body temp, max 37 C). Pour the mixture over the yeast. Add kvarg substitute (ricotta), saffron, sugar, salt and almost all the flour. Work it nice and smooth and not too sticky. Let sit for 30min with a kitchen towel over it. 

Turn the oven on 225 C.

Put a bit of flour on your kitchen bench and put your golden dough on it. Divide the dough (or not) into 35 pieces and make into S's (see picture) with the sultanas in the creases. Put your creations on some parchment paper on a oven tray. Brush the beaten egg on the buns and bake in the middle of your oven for 5-8 min (until golden). Let cool on a grid. Enjoy!
